  4. Remove the pan from the heat and let cool down completely. Unfold the pastry sheet on the work surface..
  5. Cut the puff pastry sheet into rectangle & Spoon the potato mixture down the center of the pastry, leaving 1 inch at the top and the bottom..
  6. Cut slits 1 inch apart down the sides of the pastry. Fold the top 1 inch of pastry down over the mixture..
  7. Criss-cross the strips & seal..
  8. Brush the pastry with the butter..
  9. Bake at 200°C for 15-18 mins or until the pastry is golden brown..
