Wash and soak the green gram and urad dal separately. Next day rinse it well then drain water and grind it with ginger,green chillies Add water to make to dosa batter consistency. Heat a dosa tawa, take a laddle full of batter and spread it thin like dosa. While its still cooking add chopped onion.

  1. Wash and soak both the grams for 6-8 hours in adequate water.
  2. Drain the water after the soaking period.
  3. Grind the grams with garlic and chilli using very little or no water.
  4. Transfer the batter to a large bowl and keep covered for 3-4 hours for fermentation.
  5. Before cooking, add soda bicarb and salt to the batter. Mix well.
  6. Grease idli trays and add 1-2 tablespoons of the batter in each and steam for 8-10 minutes.
  7. Let cool and demould the idlis.
  8. Serve warm with your choice of chutnies/sambhar/veg stew.
  9. Alternatively, you can make dosas of the batter too. The entire process remains the same, just skip adding the soda bicarb to the batter.
