  8. Prepare 1/3 cup of Sour Cream Yogurt or Plain.
  9. Prepare 1 teaspoon of Vanilla Extract.
  10. You need 1/4 cup of Vegetable Oil.
  11. It's 2 Tablespoons of Butter Melted.
  12. You need 1/2 cup of Nuts chopped (any or a mixture of Almonds, Walnuts, Pistachios, Cashew etc).
  13. You need 1/2 cup of Marshmallows chopped or mini (there are vegan options available too).
  14. Prepare 1/2 cup of Chocolate Chopped.

  1. Preheat oven to 160 C / 325 F. (Reduce to 140 or 150 C if using convection oven) Line cupcake mold with liners..

  3. Mix together yogurt, oil, vanilla extract and melted butter..
  4. Sift in the dry ingredients. Gently mix to form a smooth, lump-free batter..
  5. Add half of the marshmallows, chocolate and nuts and mix well to distribute evenly..
  6. Scoop out the cake batter into the cupcake mold. Bake for 25 minutes at 160 C..
  7. Remove the cupcakes, top them with marshmallow and chocolate. Bake for another 5-7 minutes until the chocolate starts to melt and the marshmallows start to roast..
  8. Let them cool for a bit; unmold and enjoy..
  9. Have them warm or at room temperature..
  10. To store, place in an air tight box and store in the fridge. Before eating, warm it up slightly.
