Raw Cauliflower Salad. A nice twist on using cauliflower. We've had this recipe in our family for many years and it's always a nice change from the normal salad. Add or subtract ingredients as you have them on hand without greatly changing the overall recipe.

  1. You need 1/2 of cauliflower.
  2. It's 2 of carrot.
  3. You need 1 can of peas.
  4. Prepare 1 of chopped parsley, basil.
  5. It's 5 tbsp of olive oil.
  6. Prepare 1/2 medium of lemon juice.
  7. Prepare 1 of salt, pepper.

And while cabbage is known to cause bloat and other, ehm, "not so nice", intestinal issues (OK yes, I'm talking about farting), I've never had any of those issues with Cauliflower. Remove the core and leaves from the cauliflower. Cut into small, bite size florets and place in a large mixing bowl. In a large bowl, combine cauliflower, bacon, cheese, green pepper and onion.

  1. Mix together the cut cauliflower + grated carrot + peas + cut greens + olive oil + lemon juice + salt + pepper.

In another bowl, combine mayonnaise and sugar; spoon over cauliflower mixture and toss to coat. Break cauliflower into florets, cutting any larger ones into thin slices. Mix with carrots, red onion, capers and chopped parsley. Whisk white wine vinegar with Dijon mustard, season, then whisk in olive oil and mayonnaise. Pour over the salad and mix well.
