- It's 1 tbsp of olive oil/ coconut oil.

- It's 1-2 heads of tatsoi or komatsuna or pak choi, torn into small pieces.

- Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside..
- In a jug, mix the miso and water until the miso is dissolved..
- Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins..
- Add the mushrooms and sauté for 2-3 mins..
- Add the tofu and sesame seeds. Sauté for 1-2 mins..
- Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins..
- You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋.
